Job Summary

Perform skilled cutting, trimming, deboning and portioning of meat and poultry to prepare products for sale or further processing. Maintain product quality and follow food safety and sanitation standards in a production environment.

Main Duties

  • Cut, trim, debone and portion carcasses and primal cuts according to specification and production plans
  • Operate and maintain cutting, slicing and portioning equipment safely and efficiently
  • Inspect meat products for quality, removing defective portions and ensuring correct weights and portions
  • Package, label and prepare products for storage or shipment, recording production details as required
  • Follow sanitation and hygiene procedures, including cleaning and sanitizing workstations and equipment
  • Adhere to workplace safety protocols and report hazards or quality issues to supervisors

Requirements

  • Previous experience working as a meat cutter, butcher, poultry preparer or in a food processing environment preferred
  • Proven knife skills and manual dexterity for precise cutting and trimming tasks
  • Knowledge of food safety and sanitation practices and the ability to follow established procedures
  • Physical stamina and ability to stand for extended periods, perform repetitive tasks and handle heavy products
  • Basic numeracy and record-keeping skills for portioning and production tracking
  • Ability to work as part of a team, follow instructions, and adapt to changing production requirements
